Pia’s Insalata della Nonna
Pia shares her recipe for Insalata della Nonna, the refreshing Sicilian tomato salad she’s been making on the hottest days. She recommends using the best tomatoes you can find (from the farmers’ market, if possible).

Measure these ingredients with your heart! Chop your tomatoes, add as much thinly-sliced onion as you care for, and some dried oregano. Toss with olive oil and top with very thin slices of the ricotta salata.
